Beets are Ready

Our day started with devotions focusing on 2 Timothy 1:7 lead by Ken. Then a hearty breakfast of sweetened Cream o' Wheat and salami and cheese. Then Rod, Seth, and Ken worked on the construction side of things, measuring for a ladder for the water tower and grading dirt outside the seedling greenhouse. While Beth, Snjana, and I harvested beets, some of which were the size of an American football, and we were surprised by their sweetness. We then cut onions and beets. We canned 79 jars of beets mostly over an open fire. Ken and Angela went to get construction supplies and returned to help with the finishing touches on the canning. Beth and our cook, Natasha, became quick friends, and the conversation over the kitchen table was so sweet. We finished up at 10:00 p.m. had watermelon for a snack and off to bed we each went. Thank you, Lord, for all the beets and a team of guys who can do construction projects, and for Seth, who can do meter conversions like a pro.
